Savoury Buckwheat Pancakes

buckwheat pancakes with scrambled eggs and kale with pumpkin seeds

 

Ingredients

1 cup buckwheat flour

1 tsp baking powder

1 tsp flax seed meal

pinch of salt

1 egg

3/4 almond milk or water

 

How to make then:

Blend all the ingredients together until smooth. heat some coconut oil in a frying pan over medium heat. pour the batter in the frying pan and bake for around 2 minutes on each side or until slightly golden. 

I would recommend you to pair them with a cream like avocado cream, hummus or some veggie spread. If paired with 'dry' ingredients it might be a bit dry as buckwheat it self absorbed lots of liquid.
