Chickpea Fritters

looking for something quick and easy to make that will fill your body with energy and lot's of nutrients, these chickpea fritters are a good choice!

Just finely cut some vegetables that you have left in you fridge, I used courgette and bell pepper. I would recommend a vegetable that does not need too much time to cook.

to create the fritter mixture add the following ingredients in a bowl and mix well:
2/4 cups of chickpea flour
paprika powder
pepper
salt
(garlic powder)
1 tsp baking powder
1 cup of water (add more if the mixture is too thick)

Once the batter is done add the vegetables and mix again, heat a pan over medium to high heat and add some coconut oil, fry both sides until golden brown and add some (vegan) pecorino on top and voila!
