Peanut Butter and Coconut Sugar Cookies

Ingredients:

  • 1 cup natural peanut butter
  • 1 cup coconut sugar
  • 6 tbsp almond milk
  • 2 tsp vanilla extract
  • 1 cup spelt flour
  • 1 tsp baking soda

Instructions:

  1. Preheat the Oven: Begin by preheating your oven to a moderate temperature (typically around 350Β°F or 175Β°C).

  2. Mix Peanut Butter and Sugar: In a mixing bowl, combine 1 cup of natural peanut butter with 1 cup of coconut sugar. Mix them well until they are thoroughly blended.

  3. Blend in Almond Milk: Gradually blend in 6 tablespoons of almond milk, ensuring it's fully incorporated into the mixture.

  4. Add Vanilla, Flour, and Baking Soda: Stir in 2 teaspoons of vanilla extract. Then, mix in 1 cup of spelt flour and 1 teaspoon of baking soda until the mixture forms a consistent dough.

  5. Shape the Cookies: Roll the dough into even balls. Place them on a baking sheet lined with parchment paper. Flatten each ball with the bottom of a glass to your desired thickness.

  6. Bake the Cookies: Bake the cookies in the preheated oven for 10-13 minutes, or until they are golden and set.

  7. Cool and Store: Allow the cookies to cool on the baking sheet or a wire rack. Once cooled, store them in an airtight container. Enjoy them while they last! πŸ˜‰
