Simple Honey Cookies - Christmas version

Easy simple and healthy vegan christmas cookies recipe, they are super tasty and crunchy

Looking for a simple recipe to make some vegan christmas cookies for the upcoming holidays? Below recipe is a must try! 

What do you need?

1/4 cup vegan butter (I used Vegan Block)

1/2 coconut sugar

1/3 cup natural honey

1 flax egg (1 tbsp + 3 tbsp hot water)

1/2 tsp vanilla extract

2 cups all purpose flour

1 tsp baking soda

1/4 tsp salt

1 tbsp cinnamon

 

How to prepare:

1. add all the wet ingredients into a bowl and mix until all combined

2. sift the dry ingredients into the same bowl and mix all ingredients together until you can form a ball with the dough

3. cover the dough with some cling film and add to the fridge for 30 minutes

4. preheat the oven at 160 degrees celsius

5. sprinkle some flour on your kitchen surface and roll the dough out until you reach a thickness of about 0.5cm 

6. flour your cookie cutters every time you use it to cut out a cookie. this will prevent the dough from sticking to it. 

7. continue this process until you have finished all the dough

8. add the cookies to a baking tray and bake for 12-15 minutes

9. once done let them completely cool down before you decorate or enjoy them so they can get their complete crunchy texture

 

to store, place the cookies in a airtight container and enjoy up to 2/3 weeks when stored at room temperature or one month when placed in the refrigerator. But trust me, you'll finish them before then!
