  • Salt: A pinch (less than 1 gram)
  • Optional: Cinnamon - 1 gram (about 1/4 teaspoon)
  • Egg (or Flax Egg): 1 large egg (about 50 grams), or for a flax egg - 1 tablespoon ground flaxseed mixed with 3 tablespoons water
  • Coconut Oil, Melted: 30 grams
  • Maple Syrup or Honey: 30 grams
  • Vanilla Extract: 2 grams (about 1/2 teaspoon)
  • Mixed Berries (fresh or frozen): 40 grams
  • Dark Chocolate Chips (70% cocoa or higher): 30 grams

Instructions:

  1. Preheat Oven & Prepare Pan: Preheat your oven to 175°C (347°F). Line a 4-cup muffin tin with paper liners or grease it.

  2. Mix Dry Ingredients: In a mixing bowl, whisk together the oat flour, rice protein powder, baking powder, salt, and cinnamon (if using).

  3. Prepare Wet Ingredients: In another bowl, combine the sourdough starter discard, egg (or prepared flax egg), melted coconut oil, maple syrup, and vanilla extract. Mix well.
